Food waste in the supermarket of the future: A qualitative study towards identifying design opportunities for OneThird

This thesis aims to understand food waste at the retail level and explore how it can be effectively tackled in the supermarket of the future, enabling OneThird to make informed decisions based on stakeholder insights. Due to the systemic nature of the problem, the research takes a multi-layered approach, combining broad, industry, and consumer perspectives. Three methods are used: a literature review, expert interviews, and a consumer survey. These together produce 12 insight statements and 12 design spaces, which OneThird can use to stay relevant while pursuing its mission of reducing food waste. An impact-feasibility matrix organizes these design spaces, showing which areas to prioritize based on policy, current practice, and OneThird's expertise. The findings reveal the current status of supermarket food waste, highlight future challenges, and offer valuable insights for other stakeholders.
